Cassie’s Choc Chip Cookies

There is nothing better than a soft, warm cookie fresh out of the oven on a rainy Sunday afternoon. This is my go to recipe… speedy, effortless,  cheap and deliciously soft. It’s my take on Millie’s Cookies, a UK favourite!

Ingredients (makes 30 small cookies)

  • 120g butter, melted
  • 100g light brown sugar
  • 100g caster sugar
  • 1 egg, beaten
  • 1tsp vanilla essence
  • 220g self raising flour
  • 1/4tsp salt
  • 150g chocolate (I use milk or/and white)


I let my never-failing Kenwood Chef do the work for me, but you can opt for the upper body work out version 🙂

  1. Preheat your oven to 160C (fan)
  2. Cream together the sugar and butter
  3. Slowly mix in the egg and vanilla essence
  4. Sieve in the flour and the salt mix through the creamed dough
  5. Cut your chocolate into chunks (I do big chunks myself)
  6. Shake a little flour onto your hands and make small walnut size balls, placing on a greased cookie sheet
  7. Gently press down the tops of the cookies with your fingertips
  8. Bake for 7 minutes and then flatter with a spatula
  9. Bake for one more minute, they will still seem quite soft as you get them out (if you like a crunchier cookie, leave for an extra 2 minutes or so)
